Weekend Cooking: Noodles and Omelet
Lunches are generally a variation on pasta or noodles. The first is no different. Just sauteed mushrooms and Thai fish cake over green tea noodles. I had high hopes for the noodles but they turned out to have no flavour and only contributed a pleasant green colour to the lunch box.
The second was an omelet (2 egg whites and half a yolk with coriander chutney) on a chapati. Omelet flavours meshed well with the chapati, which is well-spiced and a little hot. The chapatis are handmade locally and only available at the summertime farmer's market, so I usually stockpile some for winter. This is one of the last, but the market opened this week so fresh supplies will soon be forthcoming!
