Basically macaroni with mushrooms and grated cheese, baked for 15 minutes in the toaster oven. More salt and using raw mushrooms for the liquid would make this better but I'm surprised by how good and easy this is for a cold winter day.
Okra with onions, garlic, fish sauce and chilli powder make a healthy counterpoint to the mac and cheese. A quick fry on high heat reduces the stickiness potential of the okra.
