A surfeit of less than crunchy Gala apples and sour tangerines led to this recipe for Mom's Apple Cake from Smitten Kitchen. Very moist, not too sweet and so easy to make, this recipe is a keeper. I also love the fact that there's no dairy, which will make it a good last minute recipe. Two thirds made 4 mini-loaves.

Weekend Baking: Apple Cake
A surfeit of less than crunchy Gala apples and sour tangerines led to this recipe for Mom's Apple Cake from Smitten Kitchen. Very moist, not too sweet and so easy to make, this recipe is a keeper. I also love the fact that there's no dairy, which will make it a good last minute recipe. Two thirds made 4 mini-loaves.
