Chicken vindaloo from an Asian Home Gourmet spice packet w/tomato paste, sweet yellow peppers in lieu of onions and boneless skinless chicken breast make for a pretty decent lunch with a buttery Kawan prata. Easy and quick but not as spicy as I'd have liked.
