Lemon Souffle Biscuits

These lemon souffle biscuits from Border Biscuits were a pre-Christmas purchase from World Market. Basically a shortbread with lemon peel bits, they have a great flavour, and as you can see from their site, all-natural ingredients. Not sure why they are called "souffle" though.
