Weekend Baking: Vegemite and Cheese Scrolls and Peanut Butter and Oatmeal Cookies

I was up at 5:30am on Saturday and had these baked and cooling by 9:30am. Admittedly both were very easy recipes with short baking times.

Both were slightly disappointing. The cookies looked great but were strangely tasteless and not sweet at all. As someone who is very ready to criticize baked goods for their (over) sweetness, I ended up dipping them in melted dark chocolate in an attempt to add some sweetness. I really like the idea of these cookies and the cruncy texture though, so will work on adjusting the recipe for better results. Maybe more peanut butter and white sugar instead of brown next time.

Vegemite and cheese scrolls are one of my favourite snacks. I think those were based on a yeast-raised bread though, as these were rather solid. Shortcuts don't always pay off! Won't be repeating this particular recipe even though the results were OK, as I want to replicate a specific taste memory and this isn't it.
