Weekend Cooking: Tamarind Fried Rice and Chicken Tikka with Focaccia

A couple of simple yet delicious lunches with an Indian inflection.

Tamarind rice spice mix was one of my finds of 2010. With some frozen mixed vegetables and fried tofu, topped with sunflower seeds for crunch this is a quick yet excellent week day lunch. Shan chicken tikka spice and lemon juice make an easy marinade for juicy chicken thighs. Served with homemade focaccia and steamed cauliflower.
