
A recent acquisition of cocoa powder has opened up a whole new world of recipes. Dorie Greenspan's cookies are old hat by now for many, but were a great introduction to using baking cocoa. Not having a mixer of any kind, the hand beating and blending just about killed me though. Right until the end I kept thinking I had mis-measured some of the ingredients, but it finally came together, though the dough was still extremely crumbly.
This creates the most incredibly fragrant dough when baking. Almost worth it just for the smell of chocolate permeating my small apartment. Great cookies that are not too sweet and possibly even somewhat healthy given the lack of eggs, though I'll need several months to recover from all the hand beating they required. Luckily half the dough is still in the freezer.
