Weekend Baking: Coconut Cookies

Excellent crisp texture. Very strong coconut flavour. These tiny morsels make this an excellent addition to an afternoon tea. As with the linked blog post, mine came out slightly brown.

Weekend Baking: Coconut Tea Cake

I loved the super crispy texture of this tea cake which I made into muffins. Not too sweet, but not a very strong coconut flavour either. Maybe toasting the coconut next time will help.
