Leftovers: Spicy Rice

Picked up this Indian spice packet mix on impulse while shopping on Devon Avenue during my Christmas trip to Chicago. With leftover rice, some frozen soup mix and fried eggs strips this was a tasty and quick dinner for a busy week.

Leftovers: Water-boiled Beef

Repurposed leftover Sichuan water-boiled beef (shui zhu niu rou)into lunch on New Year's Day as a topping over noodles. The beef came from a local Cantonese restaurant that recently added a few Sichuan dishes to the menu, so wasn't as spicy as I would have liked, and the beef was over-tenderized.

Leftovers: Quiche and Cheater's Cake

Trying to use up the leftovers in my fridge this week instead of constantly shopping for more food.

Tonight I was able to use up some elderly yellowing broccoli, bendy celery, spring onions, mushroom and tofu in this quiche. Later in the week, another quiche with mushrooms, spinach and tofu.

Cake was another variant on cheater's cake with some very wrinkled cherries. Came out way too sweet today, probably because of the cherries. Still delicious though. Sadly can't say the same for the baked version of this easy muffin recipe. Rather dry and floury. Guess there's a reason for the milk in these recipes. Too bad as I don't drink milk so never have it around.

Leftovers: Pita pizza

Whole wheat pizza spread with chilli chutney for some spice, topped with eggplant, yellow peppers and cheese made an easy lunch and good way to use up leftover veggie odds and ends. A little bland despite the chutney, but healthy.
