April: Cooking

A lot of noodle meals this month as I try to clear the fridge before leaving town for seven weeks. A package of green vegetable noodles brought a touch of spring to the cold days. Bottom left was particularly spring-like with salmon. Top right was a kitchen sink bun with romaine, peanuts, cherry tomatoes, ham and fish balls. To the side: mussels with yellow peppers and chicken, fish cakes, cashews and cherry tomatoes.

Random miscellany: queso fresco with eggs and sweet potato chips, new to me yogurt brand Koru (liked the passionfruit flavour but not as creamy as my new favourite, Liberte), avocado with hard boiled egg on toast.

Weekend Baking: Pandan Yogurt Cake

A reworking of an old favourite with slightly too much pandan paste adds up to a tasty, but virulently green cake.

Sweet Snacks

A couple of sweet snacks for a cold week. No baking as I need to lose weight and am preparing for a big Chinese New Year blowout next week. First, a giant milk chocolate "H" from the Netherlands. Sweet and milky.

The other was plain yoghurt topped with matcha jelly and brown sugar.

Grapefruit Yoghurt Cake

I finally decided to bring this grapefruit yoghurt cake from smitten kitchen to a holiday party. I love yoghurt cakes for their moistness and find the bitterness of grapefruit cuts a lot of the sweetness of many cakes. Unfortunately due to operator error the two loaves I ended up bringing were overbaked and so the tops was burnt. The extra batter baked in muffin cases at a lower heat turned out perfect: moist and the glaze was able to penetrate to add a pleasant sweetness.

Lime yoghurt muffins

Another venture into baking using Babe in the City's Citrus Yoghurt muffin recipe. Unlike hers mine browned nicely but insides are very light. Adapted by omitting the zest as I didn't have any, and substituting Yoplait Key Lime yoghurt for the plain. Scrumptious with a very light, fluffy texture and strong lime flavour. Yoghurt is excellent on its own too.

Plain yoghurt with spicy chaat mix makes a healthy and delicious snack.

Milka Lime and Green Tea

Milka Limette und Gruner Tee

A new limited edition flavour from this mass market manufacturer, this white chocolate bar was very sweet. The lime cut the sweetness somewhat but still the overall impression was of sweetness. As you can see the white chocolate surrounded a lime-yoghurt and tea filling. Unfortunately no green tea flavour was discernable to me at all. Interesting and worth trying once. I wish lime was used more with chocolate.
